Pickled Cucumbers
Summer pickles - cucumbers go in jar, sun or cook, but sun better
For 2-3 jars — 20 minutes prepare , 30 minutes cook
What you put:
- Bush cucumbers (many, fresh one). I grow in my garden
- 3 Cup water
- 1 Cup white vinegar
- 2 Heaped spoon salt
- 1 Big spoon sugar (only for cooked one)
- 3 - 4 whole garlic head. (Then make use cloves)
- Fresh dill. I grow this in garden too
- 1 Chili (optional, small one good in sun)
How you do:
1. Cooked pickles
Mix water, vinegar, salt, sugar
Put cucumber then garlic, dill in jars
Pour water and vinegar mix over to full.
When all jars ready, you put clean tea towel in bottom of large pot, put jars of cucumbers in pot (yes, on the tea towel). Now you fill with cold water - to jut under the lids. Don’t put water over the lids.
Cook jars to 90°C (use thermometer)
When is 85–90, stop heat.
You leave the water and jars in the the pot until it goes cold natural - maybe leave overnight. This seals the lids
After jars ready - keep in cold, dark place
Wait one month — good to eat.
Can leave for many months.
We do this in summer with our cucumbersfrom garden, so in winter we can have picked ones!
2. Sun pickles (better one). In summer only
Mix water, vinegar, salt (no sugar)
Add cucumber, garlic, dill, one small chili
Close jar tight
Put outside in sun 3 to 4 day. If sun too strong you put under tree in shade.
