Chicken Paprikash with Knedle

This one Germany, Hungarian and Yugoslav popular. We eat always. Is good one.

Chicken Paprikash with Knedle

For 6-8 servings — 45 minutes prepare , 2 hours cook

What you put:

  • 2 kilo chicken thigh (wash)
  • 4 chicken feet (if you find. Give flavour. But ok if no)
  • 4 big brown onion
  • 10 white potato (washed, peeled, cut in wedge — “That’s for cooking this one. But red one for baking”)
  • 4 Hungarian wax pepper (or banana pepper). The long, yellow, skinny one – not round one. You use whole, not cut. Not the hot one.
  • bunch parsley, washed (Not chopped. Tied together)
  • 3 heaped spoon sweet paprika. This give paprikash nice taste and colour. Put in more if not enough red colour.
  • Vegeta - how much you like
  • 1 big spoon salt
  • Chili (little bit if you want spicy)
  • 4 spoon sunflower oil
  • Hot water
  • Optional: Little bit lemon at the end if you want small kick. Only if you want

For knedle (dumpling):

  • 2 cup flour
  • 1/2 teaspoon salt
  • 2 eggs
  • 3/4 cup water

If no time to make knedle, that OK too. You just put extra potato or eat with bread.

How you do:

1. Onion first

Chop onion, put in big pot with sunflower oil
Cook slow until gold — “You see the onion like that change colour”
Add salt
Add Vegeta
Splash little hot water to make sauce — maybe half cup
Lid on. Cook a little bit “After you try, to check that’s good or no”
Must be thick, yellow. Not soup

2. Chicken go in

Put chicken thigh. Put feet if you have
Stir. Lid on. Cook 20 min
Meat must be half done, soft outside

3. Now paprika

Put 3 big spoon sweet paprika
Add chili if you want
Stir
Put potato — Cut in big wedge, not tiny
Add cold water — Just enough to cover meat. Not too much
Throw in parsley bunch too Lid on again

“Now start to cooking”

4. Finish with love

Cook until potato almost soft
Now put peppers — Whole. Not cut
They need 15–20 minutes
When soft, and sauce is red and thick — is done
Taste. Maybe little more salt or Vegeta
Maybe small lemon or vinegar. Only little. Not sour. Just lift

How you do knedle:

  1. Mix flour, salt, eggs, water in bowl
  2. Must be soft, bit sticky
  3. Let rest 15 min
  4. Take spoon, drop into bubbling paprikash
  5. Cook 3 min. They float. Done.

How you serve:

Scoop in bowl
Put chicken, potato, pepper, and maybe dumpling if you made
