Chicken Noodle Soup (Rosil)
This soup is no fast. No shortcut. For flavour you must wait. Baka show you. You do like this. I make many time. Before you born
For 8-10 servings — 45 minutes prepare , 4 hours cook
What you put:
- 1 whole chicken for soup. You wash. (Not little baby chicken. You ask chicken shop lady for boiling one. Tough but good for rosil)
- 5 beef rib (good bones, wash them! Always!)
- 1.5 teaspoon salt (put little. Later you taste more)
- 2 onion (just peel, no cut, whole go in)
- 3 or 4 carrot (give soup nice colour, you peel them)
- 2 or 3 stick celery (no leaf! Too bitter. I don’t like)
- 1 kohlrabi (you know this? You peel like potato)
- 1 large parsnip (peel and cut in half. Not fancy)
- 2 spoon Vegeta (heaping one. Not shy with this)
- Parsley, fresh (I tie in bunch like flower, this from my papa)
- Thin egg noodle (cook separate! Don’t throw in pot like monkey)
- Sunflower oil (little for fry onion)
How you do:
1. First we boil chicken
You take big pot. Biggest you have. 15 litre if got.
Put washed chicken inside, fill water to cover. (Cold water, never hot water from kettle. Use cold water for make soups. More better flavour)
Add little salt, maybe one and half spoon
Now… slow
You no boil fast. You wait
Turn heat low. You go do laundry or fix something what you need do. No be lazy
After maybe 1 and half hour, chicken soft. You poke with fork. If soft? Good. If not? Wait more longer
2. Beef rib go in
After chicken soft, you put beef in pot. You don’t just throw rough and stupid.
But first, you wash.
Baka always wash meat
Put rib in, still simmer slow. Always slow
Use beef bone not traditional recipe. This my idea for more tasty. My mama and my baba not make like this. My good idea.
3. Onion you fry for separate
Take small frying pan. Put little sunflower oil
Whole, peeled onion go into pan. Not cut. Whole
Fry maybe 10 minute, until gold but not black. If black, no good taste soup. Terrible
Now oil and onion both go in soup. Yes, oil too. Lots flavour
4. Rest vegetable go now
Carrot, celery, kohlrabi, parsnip — all go in pot
Also parsley bunch. Tie with string like flower, you put in soup this
Let all cook slow again… maybe 1.5 hour
5. Now Vegeta, now taste
Take big spoon. Put Vegeta
You taste soup. If too bland, you add salt and vegeta. It very import to always taste.
6. Take everything out
Now you drain soup so only have liquid. Chicken, beef, vegetable left in big pot. Meat you shred with fork. Take skin and bone, throw Vegie you cut into small nice piece
7. We put back
Shred meat and cut vegie go back to soup Sprinkle chopped fresh parsley to make look fresh
8. Noodle come last
You never put noodle in pot. No no no
You cook noodle separate, like box say. Not cook too long or too soft.
When you serve, noodle go in bowl, then soup on top
How you serve:
You give big ladle in bowl
Make sure each person get meat, veggie, noodle
Maybe little fresh parsley on top in bowl too
Maybe little black pepper. My brother Nikola, he use white pepper for this.
