Baked Cheese Palachinke / (Nalysnyky)

Soft crepes, stuffed with cheese, baked with sour cream - Thursday food in Baka's house

Baked Cheese Palachinke / (Nalysnyky)

For 6-8 servings — 1 hour prepare , 40 minutes cook

What you put:

For crepe:

  • 8 cup flour (you sift good)
  • 4 eggs
  • 2+ liter full cream milk (you see for texture)
  • 1 teaspoon salt
  • sunflower oil (for pan)

For cheese filling:

  • 1 kilo full fat Continental Cheese (Tempo brand best - red one. Ricotta no good for this)
  • 2 egg
  • 3 heaped teaspoon sugar
  • 1 teaspoon salt
  • 300ml thick cream
  • Little milk or more cream (only if too dry)

For bake:

  • Full fat sour cream (for top)

How you do:

1. Make crepe batter

Sift flour in big bowl
Add egg, salt, milk
Mix with hand mixer
If thick, put little more milk. You decide

2. Cook crepes

Heat pan, sunflower oil
Ladle batter, swirl in pan
Cook one side, then flip
Soft, fluffy, little brown
Do same for all — always oil pan so no stick

3. Make cheese filling

Whisk egg in big bowl
Add cheese, sugar, salt, cream
Mash with potato masher
If dry, add milk or more cream

“No put oil in batter, just sour cream because fry with oil.”

4. Fill and roll

Put lily-bit sour cream bottom of oven tray
Take crepe, put spoon cheese
Fold sides, roll up
Put seam down, make two row
Thin sour cream spread on top

5. Bake

Oven go 180°C
Bake 30 minute
Top must be gold and bubble

How you serve:

Serve hot from tray
We eat with soup — every Thursday
